Eating Well With Marye Audet from Restless Chipotle
Today we are talking about “eating well” with Marye Audet who is from North Texas and loves to share scratch recipes from her vintage cookbook collection and family recipes on her blog, Restless Chipotle. She is a mom of eight and “gramma” to three. She is a food and lifestyle writer and has published cookbooks as well as article in magazines.
Eating Well On A Budget
Marye started by telling us how to eat well on a budget. Marye has been cooking and shopping for 10 or more people for a long time so we got some great tips from her. The big three were:
- Shop at Costco – now carry large quantities of organic food.
- Shop local – support your local economy and help reduce energy costs from shipping.
- Shop at Amazon.com – Amazon is getting into the food delivery game. Although they are not shipping fresh foods yet, it is a great source for nonperishables.
We also mentioned shopping at Thrive.com, the newest sponsor to Clean Green Talk. They provide wholesome food at wholesale prices – delivered right to your door, for FREE!
Eating Well Without Cooking For Hours
In our second segment Marye told us that eating well doesn’t mean you have to cook for hours every day. Instead she gave us some ideas for prepping and freezing.
Bake dinners in small containers like a muffin tin or popover cups. Once they are out of the oven and cool you can place them in zip lock containers and freeze them.
Work like a restaurant and prep and store ingredients in your refrigerator so they are ready when you need them. You can chop and store things like celery, onions and even garlic. Use glass Ball jars to store them safely in the frig.
A vacuum sealer is one of Marye’s greatest tools to keep things fresh in the freezer. She told us that you can store vacuum-sealed food for six months or longer this way. Both Marie and I are off to buy one this week!
We also talked about using your slow cooker for cooking large quantities of meat that can then be vacuum sealed, frozen and ready to use in different meals.
Eating Well Away From Home
How do you eat well when you aren’t at home? Marye showed us that planning and using some of those tricks our mothers and grandmothers used is the secret. For example, you can keep food cool by using a large mouthed thermos for Marye’s Low Carb Neiman Marcus Chicken Salad.
You can also bring along salads pre-made in Ball glass jars. You layer all the ingredients so all you need to do is pour them into a bowl.
Ball jars or jelly jars are a great way to bring along dessert. Marye shared her recipe for Berry and White Chocolate Mousse Parfaits in Mason Jars.
